How long does it keep?

This chicken potato salad will keep well for 4 days. Keep it covered and refrigerated to keep it fresh for as long as possible. I like to make it at least 30 minutes ahead of time to let the flavors develop.

Because this potato salad has a mayo dressing, don’t leave it at room temperature for more than a couple of hours.

What’s the best cut of chicken to use?

I like to use chicken breast for this recipe. You can cook some up in the Instant Pot, slow cooker or oven, or use rotisserie chicken for ease. You can cube or shred it, both work great.

You can use chicken thighs if you have them to hand, but I find that breast works the best.

What do you serve it with?

This creamy potato salad is great to serve with some crackers to let people scoop it up, and I love the presentation with the lettuce leaves.

Chicken Potato Salad Recipe

Instructions

  • In a large serving bowl, combine the chicken, potatoes, carrots, peas, jalapenos, 1 Tablespoon parsley.

  • In a small mixing bowl, combine the mayonnaise, Mexican cream and pepper. To over the chicken and combine. Taste, if it needs salt, add just a bit.

  • Place the lettuce around a plate and cover with the chicken salad. Sprinkle with remaining parsley.
