These Ginger Cookies are so full of flavor! Lots of ground ginger, cinnamon, nutmeg and cloves are added to the dough.

These Ginger Cookies are delicious! They are a fairly thick cookie with a crisp exterior and a chewy middle.

I really love the spice in these cookies. The main flavor is ginger, of course and it really shines through.

Perfect for eating one (or two) with a cup of coffee, a glass of milk or a glass of eggnog.

Key ingredients

Ingredients for making ginger cookies.
  • Molasses – Adds deep color and flavor
  • Spices – Ginger, cinnamon, cloves and nutmeg
  • Butter – I use salted butter. Make certain your butter is softened to room temperature so it can be fully mixed in with the sugars.
  • Sugars – Both granulated and brown sugars are used
  • vanilla – Use pure vanilla extract

Step by step directions

  • Preheat oven to 375°F
  • Mix butter until soft and creamy
  • Add granulated and brown sugar. Continue mixing for 2-3 minutes
  • Add molasses, eggs and vanilla
  • In a separate bowl, combine flour, spices, baking soda and salt
  • Add flour mixture to mixing bowl
  • Use a cookie scoop (#40) to form balls of dough
  • Drop into a bowl of granulated sugar. Roll to coat balls
  • Place on a baking sheet lined with parchment paper or on an ungreased baking sheet
  • Bake for 10-12 minutes
  • Remove cookies from baking sheet and allow cookies to fully cool on a baking rack

  • Use a cookie scoop to create evenly sized cookies
  • Allow cookies to fully cool before storing
  • Store in an airtight container at room temperature for 4-5 days

Can I freeze ginger cookies?

Yes, these cookies freeze well. Once fully cool, place in a freezer safe container or a freezer bag and freeze. Cookies are best when used within 30-60 days.

To use, simply remove from freezer and allow cookies to thaw.

Instructions

  • Combine flour, ginger, baking soda, cinnamon and cloves together.

    3 cups flour, 3 teaspoons ground ginger, 2 teaspoons baking soda, 1 ½ teaspoons ground cinnamon, ¼ teaspoon ground cloves, ¼ teaspoon ground nutmeg, ¼ teaspoon salt

  • In a mixing bowl, combine butter, granulated sugar and brown sugar

    1 cup butter, 1¾ cup granulated sugar, ¾ cup brown sugar

  • Mix in eggs, vanilla and molasses

    2 eggs, ⅓ cup molasses, 1 teaspoon vanilla

  • Use a cookie scoop to make round balls. Roll each ball into granulated sugar and place on a baking sheet lined with parchment paper.

    ½ cup granulated sugar

  • Bake in preheated 375°F oven for 10-12 minutes
